The security guards have no trouble tossing you out at the gate! Photography is prohibited until 09:00 for privacy concerns. They are quite strict about this in the inner market. Breakfast: Should you eat at Sushi Dai? If you like waiting in line to eat the same fish at restaurants all around the area, go for it! There is no quality difference between restaurants in the inner market and those on the outside – all the ingredients come from the same place. We went into a stand in the outer market to see and yes, it was great! No haggling / bargaining in Tsukiji. The price is the price. Overall, more than 700,000 metric tons of seafood are handled every year at the three seafood markets in Tokyo, with a total value in excess of 600 billion yen (approximately 5.9 billion US dollars on November 24, 2013). The number of registered employees as of 25 January 2010 varies from 60,000 to 65,000, including wholesalers, accountants, auctioneers, company officials, and distributors. The market opens most mornings (except Sundays, holidays and some Wednesdays) at 3:00 a.m. with the arrival of the products by ship, truck and plane from all over the world. Particularly impressive is the unloading of tons of frozen tuna. The auction houses (wholesalers known in Japanese as oroshi gyōsha) then estimate the value and prepare the incoming products for the auctions. The buyers (licensed to participate in the auctions) also inspect the fish to estimate which fish they would like to bid for and at which price. The auctions start around 5:20 a.m. Bidding can only be done by licensed participants. These bidders include intermediate wholesalers (nakaoroshi gyōsha) who operate stalls in the marketplace and other licensed buyers who are agents for restaurants, food processing companies, and large retailers. The auctions usually end around 10:00 a.m. Afterward, the purchased fish is either loaded onto trucks to be shipped to the next destination or on small carts and moved to the many shops inside the market. There the shop owners cut and prepare the products for retail. In case of large fish, for example tuna and swordfish, cutting and preparation is elaborate. Frozen tuna and swordfish are often cut with large band saws, and fresh tuna is carved with extremely long knives. The Tsukiji fish market occupies valuable real estate close to the center of the city. Former Tokyo Governor Shintaro Ishihara repeatedly called for moving the market to Toyosu, Koto. The long-anticipated move to the new market will take place in November 2016, in preparation for the 2020 Tokyo Summer Olympics.

'New Year Tuna' sells for $1.7M at Tokyo's famous Tsukiji fish market. Full Story: Business is booming for the Japanese fish market with a sale of a single tuna clocking in at a whopping 1.7 million USD at the New Year opening tuna auction in Tokyo on Saturday (January 5). More than triple the price of last year's highest bid, one pound of the northern Japan tuna will cost nearly 3,600 USD. The highest bidder was the owner of popular sushi chain 'Sushi Zanmai' located nation-wide Kiyoshi Kimura. The pricey tuna was immediately transported from the Tokyo-based Tsukiji fish market several blocks to a branch of Sushi Zanmai, where some customers were lucky to get a slice of the celebrity bluefin. Blue fin is the highest grade of tuna, and is known for its tender meat. Smashing all previous records, this sale may mean that the marine products industry could be looking at a profitable 2013. [Hiroyuki Taguchi, Daiichi Marine President]: "Last year I stood here in the same place to report that there was no significant change in the marine product industry, but this year there will be a change. With the motions set in place by the recent government election last year to this year, we have already been able to surpass the previous prices." Tuna is one of the fish dearest to Japanese hearts, and bluefin one of the most prized of tunas, with Japan consuming over half of the world's bluefin even as supplies dwindle and fishing quotas tighten. Tsukiji fish market (築地市場, Tsukiji shijō) is the biggest wholesale fish and seafood market in the world and also one of the largest wholesale food markets of any kind. The market is located in Tsukiji in central Tokyo. The market handles more than 400 different types of seafood from tiny sardines to 300kg tuna, from cheap seaweed to the most expensive caviar. Overall, more than 700,000 metric tons of seafood are handled every year at the three seafood markets in Tokyo, with a total value in excess of 600 billion yen (approximately 5.5 billion US dollars). Tsukiji alone handles over 2000 metric tons of seafood per day. The number of registered employees varies from 60,000 to 65,000, including wholesalers, accountants, auctioneers, company officials, and distributors. The market opens most mornings except Sundays and holidays and some infrequent closing days in the week at 3:00 a.m. with the arrival of the products by ship, truck and plane from all over the world. Particularly impressive is the unloading of tons of frozen tuna. The auctions start around 5:20 a.m. Bidding can only be done by licensed participants. The auctions usually end around 7:00 a.m. Afterward, the purchased fish is either loaded onto trucks to be shipped to the next destination or on small carts and moved to the many shops inside the market. There the shop owners cut and prepare the products for retail. TUNA AUCTION We are escorted across the Tsukiji Fish Market to a small doorway, which opens up into a huge warehouse filled with Tuna (maguro) and its buyers. The guys pace around the tuna, with a very methodical process. They examine a small piece of the tale, cut off for evaluation, and check its quality and fat content with a flashlight. Next, the tuna buyers break off small chunks of tale meat and rub it in their fingers to test its consistency and make up. Some even walk to another fish for inspection so they don’t tip their interest to other buyer’s watching. This is a very important process to get right as some of these massive fish can sell for up to 1.8 million US dollar - yes, that is the record to-date for a single fish sold here. Once everyone has picked their favorites, its time for the auctions to begin… Animated auctioneers yell out prices as stoic buyers calmly make their bids with a series of hand gestures which represent numerical amounts. Multiple auctions happen simultaneously, both fresh and frozen Tuna are sold separately, so there’s a battle between auctioneers to gain control of their own warehouse echoes. And when the dust clears, tuna’s are tagged and taken into the inner market to join all the other fish for distribution. TSUKIJI INNER MARKET The Tsukiji (SKI-GEE) Fish Market is the largest wholesale fish market in the world and the inside market or "inner market" is where all the wholesale business is done with restaurants, grocery stores, and other wholesalers. It is closed to the public before 9-10am, so if you want to go look around I recommend doing it after this time as the vendors will be much friendlier. TSUKIJI OUTER MARKET The outer market is where all the consumer-friendly vendors are. It’s an endless supply of Japanese cuisine and its components. They sell everything from giant raw oysters and grilled fish to knives and fruit. There is also a completely separate fruit and vegetable market next door. TSUKIJI FISH MARKKET - SUSHI RESTAURANTS There are literally thousands of options in front of you, so determining where to eat can be an overwhelming task to tackle. First, and most obvious, are the long lines of the highly regarded, TripAdvisor recommended, foreign-friendly sushi places. The quality is top notch and the prices reflect that. Then there’s the locally-known hot spots who boast similar lines, and equally as tasty offerings. Its really interesting to see some places with hour-long lines and then other’s right next door, completely empty. I wonder if it’s hype or is there a real difference in quality? I guess you’d have to ask the guys at the tuna auction to really know for sure. Away from the long lines, down the back streets, are a million hidden gems with no lines, and serving up a very similar spread. I really think its hard to go wrong here, given the source is so close by. But, in my amateur opinion, if you really want the freshest, pure taste of sushi at the fish market - I highly recommend going directly to the vendors who are cutting up and selling the fish. I visited a street stall breaking down the highest quality tuna you can get (otoro), for a fraction of the price as in restaurants.
